White truffles Tuber magnatum pico grow from September to December, having the highest gastronomic value. The white truffle is highly appreciated in luxury restaurants. The price of white truffles picked by us from Romania differs depending on the quality. White truffles Tuber magnatum pico have a more intense flavor than that of black truffles.
The exterior of the white truffle is yellow-ochre, yellow-green, or gray-green, depending on the habitat and host species, with the outer surface usually smooth and sometimes covered with a few brown spots. The inner labyrinths of the white truffle are initially white, white or yellowish-white, and at maturity acquire a hazel shade with reddish iridescence. The white truffle is fragile, brittle, sometimes it grows 50-70 centimeters underground, obtaining it becomes a kind of archaeological research.
STORAGE CONDITIONS
Fresh truffles are stored in the refrigerator (1-3 degrees), for 7-10 days, in a glass container, in a generous layer of rice or individually wrapped in a paper napkin. Truffle must remain dry for best quality and flavor. Replace the paper towel regularly every 2-3 days to prevent moisture build-up. Truffles can be frozen for 3 – 6 months, but some flavor will be lost in the process.
CONSUMPTION
Truffles are cleaned of impurities under a jet of cold water, with a special brush.
Fresh truffles are added as a finishing element at the end of boiled or cooked dishes, because thermal processing will diminish the flavor of the truffle. Fresh white truffles can be thinly sliced or grated and sprinkled over appetizers with toast, salad, pasta, rice, omelette. The taste of truffles combines well with poultry, turkey, fish, other seafood, wild mushrooms, potatoes.
